Pâtissière Noriko Abe
Noriko Abe was born and raised in Tokyo, Japan. She entered the Tsuji School of Confectionary Arts in Osaka in 1984. Abe continued her studies with an intensive pastry course at Tsuji Culinary School in France, followed by an apprenticeship at Patisserie Bossan . She moved back to Tokyo and began her culinary career at Patisserie La Bamboche . After several years she returned to Europe to pursue further study at Fachshule Richemont , a professional school of Swiss master bakers and confectioners in Lucerne, Switzerland. She then traveled to Austria and applied her newly gained skills at several local pastry shops in Vienna, including Konditrei Oberlaa and Restaurant Steirerec .
In 1995, Abe moved to San Francisco to pursue new life experiences. Her pastry chef career continued at MC² , The Fairmont Hotel , the Carnelian Room and 1300 Fillmore .
In August 2010 Chef Abe started her own wholesale and retail pastry business.
Her aim is for each one of her creations to perfectly express her passion for pasties. She'’d like those who try her creations to be inspired.
